At Lucky Goat, we have built an education program that puts coffee and its value at the very center. We have a program that carefully trains the baristas that pour your perfect morning latte, the franchise cafes popping up in new cities, and the coffee-passionate members of our Tallahassee community.
Cafe and Barista Education
Coffee education is a crucial first step to the onboarding practice of our employees. They go through a set of modules that take them through a thorough understanding of our brand. To start off, they learn about all things green coffee production (coffee cultivation, harvesting, processing, and grading), coffee roasting, our coffee offerings, and our menu. They next dive into the process of coffee cupping, and get a first hand experience of this process with a detailed cupping of our seasonally rotating single origins. After a few months of experience in their respective cafes, they dive into the technical skills that it takes to operate an espresso machine, carefully learning things like espresso shot pulling, dialing in grinders, milk steaming, and latte art. This careful practice is how we strive to keep our quality consistent across our cafes.
Coffee Education for the General Public
You probably selected this blog to read, however, because you were curious how you could learn more about coffee. You are in luck! We offer two coffee classes to anyone who is interested in them.
Our Barista Class is tailor made for the espresso drink connoisseurs. We go through espresso shot pulling, dialing in the recipe for your coffee, steaming milk, and touch briefly on how you might begin to practice latte art on your own! For anyone who is looking to improve their espresso making at home, or for a fun way to spend an afternoon learning more, this is a great place to start.
Our Coffee Basics Class is for the coffee nerd in us all! In this class, we cover green coffee production, coffee brewing and extraction, and recipes for all of the nuanced brewing methods out there. If you are interested in perfecting your pour over, or learning how to do a cupping, this is the perfect class for you!

Will I get to taste different coffees?
- In both classes, tasting is a core part of the learning experience. In our barista skills class, you will taste our espresso drinks made with our flagship espresso blend. In our brewing class, you'll try multiple coffee origins and learn how to determine tasting notes and evaluate acidity, body, and sweetness.
What should I bring to a coffee class?
- Just you and your curiosity! We recommend bringing a notebook if you want to jot down tasting notes or brewing tips.
