What is Wush Wush?
Wush Wush is a rare Ethiopian coffee variety named after the Wush Wush area in southwestern Ethiopia. Unlike varieties bred for consistency and high yields, this coffee developed naturally over time. Because of this, it produces smaller harvests and requires specific growing conditions, making it far less common than other coffees. The versatility is what makes Wush Wush so appealing to roasters and coffee drinkers alike.
Our Ethiopia Wush Wush
Our Ethiopia Wush Wush comes from the Oromia region, grown in Hambela at elevations between 2,100 and 2,300 meters above sea level. At these extreme elevations, coffee cherries mature more slowly on the tree, allowing sugars and acids to fully develop and resulting in a cup that’s both vibrant and layered.
This lot is produced by a cooperative of 350 smallholder farmers, many of whom tend to coffee trees that are over 50 years old. While these mature trees yield less fruit, they’re known for producing coffees with exceptional depth and quality.
What sets this coffee apart is the precision and care behind its processing. Only the most perfectly ripe cherries are hand-selected, then placed in sealed tanks for an extended 120-hour dry anaerobic fermentation, far beyond the timeline of a standard natural process. After fermentation, the beans are carefully dried on raised beds for 18 to 21 days, allowing the flavors to develop gradually. The result is a vibrant, fruit-driven cup layered with wine-like depth and a refined, candy-like sweetness.
